- Total Time: 75 minutes
- Servings: 1 loaf (8-10 slices)
Ingredients:
- Ingredients:
- 1 and 3/4 cups All-Purpose Flour (about 210 g)
- 3/4 teaspoon Baking Soda (about 4 g)
- 1/2 teaspoon Salt (about 3 g)
- 1/2 teaspoon Ground Cinnamon (optional)
- 1/2 cup Unsalted Butter (1 stick or 113 g), softened
- 3/4 cup Packed Light Brown Sugar (about 150 g)
- 1/2 cup Chopped Walnuts or Pecans (optional)
- 2 large Eggs
- 1 teaspoon Vanilla Extract (about 5 ml)
- 1 cup Very Ripe Mashed Bananas (about 3 medium bananas)
Directions:
- Preheat and Prep: Preheat your oven to $350. Grease and lightly flour a 9 x 5 inch loaf pan.
- Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Set aside.
- Cream Butter and Sugar: In a large bowl, cream the softened butter and brown sugar together with an electric mixer or whisk until light and fluffy (2-3 minutes).
- Add Wet Ingredients: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and the mashed bananas until just combined.
- Mix Batter: Gradually add the dry ingredients to the wet mixture, stirring only until the flour is completely incorporated. Do not overmix. If using, gently fold in the chopped nuts.
- Bake: Pour the batter into the prepared loaf pan. Bake for 55 to 65 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Cool: Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely before slicing.
Tips & Variations:
- Banana Ripeness: The riper the bananas (with brown spots), the sweeter and more flavorful your bread will be.
- Add-ins: Feel free to experiment with chocolate chips, dried cranberries, or shredded coconut instead of or in addition to nuts.
- Muffins: This batter can also be used to make muffins! Fill lined muffin tins about two-thirds full and bake for 20-25 minutes.
